A conversation between chefs Theo Randall and Francesco Mazzei

On the occasion of the 11th edition of the Week of the Italian Cuisine in the World, one of the longest-running thematic initiatives promoted by the Italian Ministry of Foreign Affairs and International Cooperation,  ICI London hosts a conversation between acclaimed chefs Theo Randall and Francesco Mazzei, moderated by Gail Anderson, about the all-important occasion of the Pranzo della domenica – the Italian version of the Sunday lunch. A tradition rooted in history and tradition, a domestic ritual that is transformed into a shared heritage, recognisable as a living expression of Italian culture. 

In 2025 UNESCO recognised Italian cuisine as an intangible cultural heritage of humanity. It defines it: “A cultural and social blend of culinary traditions, associated with the use of raw materials and artisanal food preparation techniques. It is a communal activity that emphasizes intimacy with food, respect for ingredients, and shared moments around the table. The practice is rooted in anti-waste recipes and the transmission of flavours, skills and memories across generations. It is a means of connecting with family and the community, whether at home, in schools, or through festivals, ceremonies and social gatherings. People of all ages and genders participate, exchanging recipes, suggestions and stories, with grandparents often passing down traditional dishes to their grandchildren. The knowledge and skills related to the element are transmitted both informally within families and formally in schools and universities. Beyond cooking, practitioners view the element as a way of caring for oneself and others, expressing love and rediscovering one’s cultural roots. It gives communities an outlet to share their history and describe the world around them. It also helps safeguard specific cultural expressions, such as language and gestures. The practice thus fosters social inclusion while promoting well-being and offering a channel for lifelong, intergenerational learning. It also strengthens bonds, encourages sharing, and promotes a sense of belonging.”

On this occasion, Theo Randall will present his latest book The Italian Table (Quadrille Publishing), a collection of recipes celebrating the food of Italy.

Theo Randall started working at the River Café in 1989. After a brief stint at Chez Panisse under Alice Waters, he returned to London to take up the role of Head Chef at the River Café and remained there for 15 years. He left in 2016 to launch his first restaurant, Theo Randall Cucina Italiana, at InterContinental London Park Lane. Theo has appeared on BBC1’s Saturday Kitchen on numerous occasions, Masterchef, Sunday Brunch, Chef’s Protegé and My Kitchen Rules. He also works with high-profile brands including Natoora, Coco Di Mama and Ask Italian. In 2024 he was awarded the Order of the Star of Italy, for his promotion and preservation of the Italian cuisine. He has written five previous cookbooks, Pasta, My Simple Italian, The Italian Deli Cookbook, The Italian Pantry and Verdura.

Francesco Mazzei is especially known for championing Southern Italian cuisine in the UK. Born in Calabria in 1973, he trained in top kitchens worldwide before leading London’s L’Anima, Sartoria, Radici, and Fiume. Author of Mezzogiorno, he popularized Calabrian ingredients like ’nduja and promotes sustainable, seasonal cooking. Honoured with the Order of Merit of the Italian Republic, he is also known for philanthropy and high-profile collaborations, including with Stanley Tucci and King Charles III.
